Today is the last laser day of this set. I’ve been working on the laser since Halloween and it’s been very productive. To celebrate, I want to make something special to eat tonight. I have two grass fed beef steaks that I defrosted. They were purchased from Green Grocer and are from Amish farmers in Indiana. I will pan fry them in my cast iron skillet tonight. I have also been itching to replicate Thea’s caramel corn. The following is her recipe that she got from her sister in law. I’m curious what kind of popcorn she used (microwave? kernels popped on the stove? store-bought bag?). I look forward to a shopping trip to the Jewel Osco across the street to get these ingredients. Also, I’m wondering where I will buy groceries during the winter while Farmer’s Markets are closed.
Shannon’s Caramel Corn (introduced to me by Thea)
8 c popcorn
4 c rice chex
2 c pretzels (I like the square ones)
Combine above ingedients in large bowl and set aside.
1 c brown sugar
1/2 c butter
1/4 c light corn syrup
In a sauce pan on medium heat stir the above ingredients until a boil, then reduce the heat to low and cook for 5 minutes with out stirring. Remove from heat and add vanilla and baking soda.
1 t vanilla
1/2 t baking soda
(note of caution: addition of the baking soda will cause the caramel to double in size, so make sure that you use a pot larger than you think you will need!)
Stir the caramel into the popcorn mixture and spread on a baking sheet. Bake 10 minutes at 300 F. Stir and then let sit 5 or 10 minutes and separate while still hot.

I talked to Thea about the popcorn and she said she pooped kernels in a pot. Her sister-in-law used store-bought pre-popped unflavored popcorn. I will see what they sell at Jewel, but I have an awesome Dutch oven that could be good for popping popcorn.
