I bought some bison meat at the Giant supermarket because that was one of the only semi-organic, slightly freer range meat they sold. I found a recipe on epicurious that involved gorgonzola cheese but left out the cheese (to save money and prevent lactose problems) and the burgers turned out awesome. One word of advice (per Joy of Cooking): buffalo meat is very lean. Thus, it needs to be eaten rare or medium rare. My burgers were juicy and amazing but tasted a bit like tartare. Didn’t need any condiments–they were so flavorful!
Buffalo burger recipe (makes 4 huge patties)
Ingredients:
1 lb. ground buffalo
1 Tbsp. minced onion
1 Tbsp. minced parsley
1 Tbsp. worchestershire sauce
1 tsp. brown sugar
salt and pepper to taste
