To cook the rice, bring 2.5 c vegetable broth to a boil. Mix in 2 green onions chopped and 1 c frozen green peas. Season with 0.5 tsp salt, 1 pinch garam masala (see chicken korma post for how to make garam masala) and 1 pinch tumeric. Stir 1 c uncooked basmati rice into the pot. Reduce heat, cover and simmer on low for 20 min.
To cook lentils, melt 1 tbsp butter in saute pan over medium high heat. Cook and stir 10 large fresh mushrooms, chopped and 5 cloves of garlic, chopped, until lightly browned. Mix in 1 red bell pepper, chopped. Season with 1 tsp garam masala, 1 pinch tumeric, and cayenne pepper to taste (I used about 1/4 tsp). Stir in 1/2 c dry red lentils and 1.5 c veggie broth. Reduce heat to low. Cook 30 min, stirring occasionally (don’t let lentils burn!), until lentils are tender.
Brown almonds over medium heat in a separate saute pan for about 2-3 min, stirring frequently. Remove from heat, and set aside.
Mix everything together! Add cilantro sprigs and toasted almonds as garnish. Enjoy!
