Thanksgiving in La Crosse

Sunday, November 27th, 2011

Ben and I enjoyed a relaxing Thanksgiving in Wisconsin last week. Ben went deer hunting with his dad and Uncle Jim. Andy spearheaded an effort to fry a whole turkey outdoors. Below is a photo of the woods (coulee) where Ben went hunting.

Aunt Liping’s roasted nuts

Thursday, December 23rd, 2010

My mom shared a recipe with me that she learned from her sister, Aunt Liping. I made it on Sunday night for my husband, Ben, and my in-laws, Dave and Mary Jo. They loved it!

Candied nuts

Choose 1 pound of favorite nuts: I used a mix of pecans and almonds

Dry ingredients: 1 cup of white sugar, 1/2 tsp cinnamon, 1 tsp salt

Wet ingredients: 1 egg white, 1 tbsp water

Instructions: In a bowl, beat egg white until foamy. Add nuts and toss until well coated. Combine sugar, salt and cinnamon; sprinkle over pecans and toss to coat. Spread in a single layer on an ungreased baking sheet. Bake at 250 degrees F for 60 minutes or until candied coating is browned and hardened, stirring every 15 minutes.

Cool on waxed paper.

Waverly’s new digs

Saturday, November 27th, 2010

While Ben prepares to move out of his Chicago apartment, our cat Waverly has been moved to La Crosse, WI to live temporarily with her grandparents, Mary Jo and Dave. Here are some photos I took while visiting Waverly in her new residence. She’s lucky to have such nice big windows where she can watch the birds. She also has thousands more square feet of space to explore and enjoy.

Happy Memorial Day

Monday, May 31st, 2010

I had a nice weekend. My husband and I drove 280 miles each way to spend the weekend in his hometown in La Crosse, Wisconsin. It was a great time. I went biking for the first time in over a year. My husband went fishing with his dad.

Ben and I enjoyed our trip to La Crosse. We had a look at Frank Lloyd Wright’s home (Taliesin) on the way. We also celebrated Andy’s master’s defense and ate a lot of yummy food! Click on the napkin below for a slideshow and more details!
